6-8 zucchini (maro kaddu)
500 gr beef or chicken mince
1 tbsp. olive oil
½ cup chopped onion
2 cloves grated garlic
1 cup tomato paste/sauce
1 tbsp. oregano
¼ tsp salt
¼ tsp pepper
1 cup shredded cheese (mozzarella or cheddar)
Instructions
Cut maro kaddu in halves lengthwise. Scoop out the meat.
Heat olive oil in a pan. Add onion and fry till light brown. Add garlic. Add beef/chicken mince. Fry until brown add salt and pepper. Add scooped maro kaddu. Fry for 5 minutes. Add tomato paste and seasoning. Cook on low flame until the water dries out. Fill the zucchini boats with the filling. Sprinkle with cheese and bake for 25 minutes on 180 degrees Celsius. Cheese must be golden and melted.
