Start with this base for all flavours
10 Eggs
1½ tsp salt
½ tsp black pepper
Whisk together in a bowl or large measuring cup.
Muffin tray (12 count) lined with muffin liner (silicone is best). Coat with cooking spray
Bake 15 min on 200 degrees Celsius
Filling
Flavour 1: Broccoli, chicken and cheddar cheese
1 cup broccoli steamed and chopped
½ cup boiled chicken chopped
½ tsp thyme
½ tsp garlic powder
1 cup cheddar cheese
Instructions:
Whisk in thyme and garlic powder (in the base). Stir in broccoli, chicken and cheese. Divide evenly into the muffin tray (don’t fill it more than 2/3 full). Sprinkle with more cheese if desired. Bake for 15 min or until set.
Flavour 2: Spinach, fish and cheddar cheese
2 cup chopped spinach
1 cup fish chunks
½ tsp dried basil
½ tsp garlic powder
1 cup cheddar cheese/ 2 cup grated parmesan cheese
Instructions
Whisk in garlic powder and dried basil leaves in the egg base. Stir in spinach, fish chunks and cheese. Divide evenly into muffin liners (not more than 2/3 full). Bake for 15 min or until set.
The flavors can be changed according to your taste.
